It is said that Vermont is a foodie state… and we are! Chocolate, ice cream, apple pies, salsa, cheese, cookie dough, maple syrup, many varieties of ethnic foods, to name just a few aspects… and that is not even naming the many great restaurants and the farms that supply them, and the “buy local” movement in Vermont.
This presentation will cover important aspects and methods related to:
- GPM - Good Manufacturing Practices
- HACCP Plan - Hazard Analysis and Critical Control Points
- PCQI - Preventive Controls Qualified Individual
- Cleaning & Sanitation
It will include how VMEC is developing and bringing forth training opportunities related to food safety for Vermont manufacturers.

About the Presenter: Louis Prue
Louis holds the position of Manufacturing & Business Growth Advisor at the Vermont Manufacturing Extension Center (VMEC). He has a variety of work experience from numerous
Vermont manufacturers. He’s held operational roles including Logistics Manager, Supply Chain
Manager, Quality Manager and Director of Operations. He has been on a Lean journey for over 20 years. His work experience ranges from a small start-up to a large aerospace manufacturer. As a collaborative leader, Louis enjoys identifying challenges and improving processes with functional teams. The idea of empowering a workforce to continuously improve makes his work exciting and rewarding.
Originally from northeastern Vermont, Louis moved to Burlington for a college degree and
stayed. He studied business management and earned degrees from both Champlain and Trinity
Colleges. As a lifelong learner he immersed himself in Lean philosophies, advancing that
knowledge with every position he has held.
In 2023, Louis became certified in HACCP (Hazard Analysis Critical Control Point) and certified as a PCQI (Preventive Controls Qualified Individual). Louis is a member of the VT ASQ leadership team.
As a Vermonter, Louis embraces all five seasons. He enjoys the amazing opportunities Vermont
offers in the rain, snow and even mud. You may bump into him jogging, hiking or biking back-
country trails. In addition, he plays hockey and dabbles in standup comedy. Most importantly,
Louis is a dedicated husband and father.
